Broccoli Cheese Soup

This recipe is an instant family favorite. It’s a great way to squeeze in veggies, and, served with a biscuit or side salad, makes a satisfying, delicious dinner.

Broccoli Cheese Soup

Serves 4

Ingredients

  • 4 tbsp butter
  • 1 onion, grated or chopped fine
  • 1 1/2 tsp garlic
  • 1/4 c. flour
  • 2 c. chicken or vegetable stock
  • 10 oz frozen broccoli
  • 1 c. 1/2 & 1/2 (or whole milk if you prefer a lighter soup)
  • 8 oz shredded cheddar
  • 3/4 tsp ground mustard seed
  • salt to taste

Instructions

  1. In a medium saucepan, saute onion in butter over medium high heat until onion is soft.
  2. Add garlic and flour, and stir for one minute more.
  3. Whisk in stock and stir until thickened.
  4. Add frozen broccoli, stir and reduce heat to medium low.
  5. Cover and simmer about 10 minutes until broccoli is soft.
  6. Remove broccoli to cutting board, and chop into bite size pieces. Return to pot.
  7. Stir in 1 c. 1/2 & 1/2, 8 oz shredded cheddar, and ground mustard. Stir until cheese is melted.
