Overnight French Toast Casserole

Serves 6-8

Ingredients for French Toast

  • butter for baking dish
  • 1 loaf challah or brioche, sliced into 1 inch pieces
  • 8 eggs
  • 1 c. whole milk
  • 1 c. 1/2 & 1/2 or heavy cream
  • 1/4 c. brown sugar
  • 1 tbsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • salt

Ingredients for Topping

  • 1/2 c. (1 stick) butter, softened
  • 1/2 c. brown sugar, packed
  • 1/2 c. chopped pecans
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  1. Butter sides and bottom of baking dish. Recommend using a casserole pan that can transition from refrigerator to oven, like Pyrex.
  2. Layer slices of bread standing up in the dish, alternating sides and overlapping as needed.
  3. In a large bowl, combine remaining French Toast Ingredients, mixing well.
  4. Pour egg mixture over bread, cover and refrigerate overnight. You may want to squish the bread slices down a bit, but they don't need to be fully immersed.
  5. In the morning, preheat the oven to 350F. Depending on your casserole dish, you may want to bring closer to room temp by sitting out for an hour or so first.
  6. Combine topping ingredients and spread evenly over the casserole.
  7. Bake 45 mins until puffed and golden.
