Cauliflower Pasta Gratin

The name does not do this one justice. This dish is incredibly delicious and a family favorite. It feels fancy enough for a dinner party side dish and is easy enough for a weeknight favorite. Plus, it’s a great way to squeeze veggies into a kid favorite - mac and cheese!

Cauliflower Pasta Gratin

Serves 6

Ingredients

  • 6 oz frozen cauliflower
  • 6 oz pasta
  • 4 tbsp butter, divided
  • 3 tbsp flour
  • 2 c. whole milk
  • 1/2 c. shredded gruyere
  • 1/2 c. shredded havarti
  • 1/4 tsp nutmeg
  • 1/3 c. panko bread crumbs
  • 1/3 c. grated parmesan
  • salt to taste

Instructions

  1. Preheat oven to 375F.
  2. Bring a large pot of salted water to a boil. Add cauliflower and pasta.
  3. Meanwhile, in a large oven-safe braiser, melt 2 tbsp butter over medium heat. Add flour and stir to combine.
  4. Whisk in milk and continue stirring until thickened.
  5. Remove from heat and stir in Grueyere, Havarti and nutmeg. Continue stirring until cheese is melted and well combined.
  6. Once cauliflower is soft and pasta is al dente, drain well and stir into cheese sauce.
  7. Melt remaining butter
  8. Top with bread crumbs and Parmesan and drizzle with melted butter.
  9. Bake for approximately 25 minutes until top is golden brown and sides are bubbling.
